Green Tea Chiffon Cake

I had been browsing for chiffon cake recipe lately and finally I had decided to bake my first green tea chiffon cake. I was planning to bake pandan chiffon cake but I didn’t have pandan leaves with me and I found that green tea also can be use to bake for chiffon. This recipe is taken from Bake Me Happy and Happy Home Baking .
I do not have green tea powder so I had replace with green tea bag. I like this green tea so much as it has some mint taste with it.

This is my green tea chiffon cake. I am wondering how come it didn’t raise much??? Did I forget to add in something? Hmmm…it is soft, smells good and of course it taste good but I couldn’t taste the green tea, only eggs. Overall, it is not too bad for the first trial…hehe. Well, I will keep trying till it become what I expected! = )



Ingredients

20ml green tea
2 egg yolks
20g caster sugar
20ml olive oil
40g self-raising flour

2 egg whites
1/4 teaspoon cream of tartar
50g caster sugar



What to do

(1) Pour hot water into the tea bag and let it cool. Sieve flour and set aside.

(2) Separate egg yolks/whites and bring to room temperature.

(3) Whisk egg yolks and sugar in a mixing bowl until sugar just dissolved. Add in green tea mixture and oil. Whisk till combined. Sieve over the flour and fold gently with a spatula until flour is fully incorporated into the batter.

(4)In a clean, dry mixing bowl, whisk egg whites and cream of tartar with an electric mixer until mixture becomes frothy and foamy. Add in the sugar in 3 separate additions while beating at high speed till stiff peaks form.

(5)Add the egg white foam into the egg yolk batter in 3 separate additions, each time folding gently with a spatula until just blended.

(6)Pour batter into tube pan. Bake in pre-heated oven at 170 degC for 25 ~ 30mins or until the cake surface turns golden brown, and a skewer inserted into the centre comes out clean.
