Last Tuesday I saw some baking recipes from newspaper so I decided to try on this weekend. Here's the original recipes but I didn't follow exactly the ingredients listed in the recipes.
Ingredients
2 x 425g cans tuna in oil, drained
2 spring onions, finely sliced
2/3 cup frozen peas
2 tbs chopped parsley
1 cup cream
4 large potatoes, peeled
1 tbs butter
1/3 - 1/2 cup milk
Extra 2 tbs chopped parsley
Salt and freshly ground pepper
What to do
~ Preheat oven to moderate.
~Put the tuna in a large bowl with spring onions, peas, parsley and cream. Mix well using a large spoon or fork to break up the chunks of tuna. Put the mixture into an ovenproof casserole or individual serving dishes.
~Chop the potatoes into small pieces and cook in boiling water until soft enough to mash. Drain well and add butter, milk, extra parsley and salt and pepper to taste. Mash well, adding more milk to make fluffier potatoes. Pile potatoes on top of tuna, spreading roughly with fork.
~ Bake 15-20min or until potato topping is browned and bubbling.
Tips
~Switch the cream for half milk and cream, Greek-stlye yoghurt or canned condensed soup.
~ Corn kernels or small pieces of par-cooked broccoli can be added.
