Mini Lemon Cupcake

I have some lemons left in the fridge and I had bought the mini muffin pan long ago which I haven’t tried on it yet. So, this is my baking today. The ingredients and ways to do this cupcake is very simple. Enjoy!



Ingredients
100g self-raising flour
80g butter
40g sugar
1 egg
3 tbsp of lemon juice
Zest of one lemon
1 tsp poppy seed


What to do
1. Melt butter then add in sugar and stir till sugar dissolves.
2. Add in eggs and beat till well blended.
3. Sift flour into the mixture till well combined.
4. Add in lemon juice, zest and poppy seed. Gently mix into the batter.
5. Pour batter into small cupcake moulds.
6. Bake at 180C for 20-25mins.
